Chefs Alex Catotti and Erin Kobler bring a world-class pedigree to the Triangle's culinary scene.
They have worked for the most successful chefs and restaurateurs in Chicago, garnishing multiple Michelin stars, including John and Karen Shields of Smyth and The Loyalist; Grant Achatz of Alinea and Next; Andrew Zimmerman of Sepia and Proxi; and Jimmy Papadopoulos, Chris Pandel, and Leigh Omilinsky of Boka Restaurant Group.

Chef Alex Catotti is part of the team at three-Michelin-starred restaurant Smyth and previously was the Head Chef and Manager at its sister restaurant The Loyalist. Chef Alex got his start working for Chef Scott Howell at Durham’s own Nana’s, and honed his craft at Restaurant Trokay in Truckee, California, before entering the Chicago fine-dining scene.

Chef Erin Kobler is the Executive Pastry Chef at Michelin starred restaurant Sepia and Proxi. She has won numerous awards for her work, including the 2024 Chicago Rising Stars Pastry Chef and Chef Ambassador for Neilsen-Massey.
